Starting out our new blog with a favorite recipe!
- Two cans of coconut milk
- Two ripe avocadoes
- Agave syrup or honey
- Cacao powder
- Vanilla (alcohol free or vanilla bean powder)
Place coconut milk in fridge overnight (so solids separate from water.) Scoop out coconut solids and place in food processor (use left over water in morning smoothie :)). Scoop out avocados and add to food processor (avoid any brown spots.) Add about 1Tbsp of sweetener (you can use maple syrup too, but then the results won’t be fully raw.) Add 2 Tbsp of Cacao. Add 1 tsp alcohol free vanilla (or ½ tsp vanilla bean powder)
Blend until smooth! Stop occasionally to spatula down the sides. Taste and add more cacao or sweetener as needed. Reblend. You can eat it right away (lovely with fresh or frozen fruit), or place in fridge for at least one hour to gain a fluffier texture. Enjoy 🙂
